These crispy Air Fryer Southwest Egg Rolls are a huge favorite at my house. You can use the deep fryer or air fryer for a healthier option. Filled with chicken, bacon, black beans, green chilies, jalapeños, and my favorite Casa M Spice – Chain Reaction! Use wonton wrappers for the perfect party size appetizer or use egg roll wrappers and serve them as a meal with rice and beans. Whichever way you do them, they will sure to be a hit! And yes, you can even freeze them for later!

Chain Reaction Spice is my favorite one in Casa M’s collection and it’s also their original spice. All of their spices are low in sodium, 80% less, with no perceivable loss in flavor.

Two sizes: Wonton Wrappers or Egg Roll Wrappers

You can make the egg rolls with wonton wrappers or egg roll wrappers. I use both, but it depends on my purpose. If I want them for dinner, then I use the bigger egg roll wrappers, if I want to serve them as an appetizer for a party, then I use the wonton size. Obviously the egg roll size wrapper are faster to make, because of their size, but with the wonton size, it’s nice having a lot of appetizers in the freezer that you can easily air fry when guests arrive.

Two ways to fry – Air Fry or Deep Fry!

You can air fry or deep fry them. Whichever way you do them, they are delicious! On the left are the air fried egg rolls and on the right are the deep fried. The air fried are definitely healthier but still taste great! The ones deep fried look prettier, but they also have a lot more calories.

What’s the best way to cook the chicken for the egg rolls?

You can cook the chicken in a variety of ways:

  • You can grill it, see my Best Healthy Grilled Chicken Recipe,
  • You can use the Instant Pot – see my Delicious and Moist Instant Pot Chicken
  • You can also purchase rotisserie chicken.
  • Or you can even just chop up the chicken and sauté it in a pan, and use the Casa M Chain Reaction Spice (paid link) for seasoning.

For me, in order to make this recipe super easy to make, I just use my grilled chicken already prepped in my freezer. That’s the beauty of food prep – always having something you can pull out and put together.

Can you bake them?

Yes, you can definitely bake them. Bake in preheated oven 350° on a baking sheet (paid link) lined with parchment paper (paid link) for about 6-8 minutes. Then flip over with a spatula, spray with oil and bake another 6-8 minutes until crispy looking.

Can you freeze them?

Yes! Flash freeze them first on a baking sheet (paid link) uncovered. Then transfer them to vacuum sealed bags (paid link). When ready to use, thaw first and fry.

What should I serve with them?

  • Roasted Tomatillo Green Salsa
  • Light sour cream mixed with Chain Reaction

How to make Southwest Egg Rolls in pictures:

In a large bowl, mix together chicken, Chain Reaction Spice (paid link), black beans, kosher salt (paid link), green chilies, bacon, green onions, garlic, cilantro, lime, and cheese.

On a flat surface such as a cutting board, arrange one egg roll wrapper so that one of the points is pointing towards you. Place about 1/4 c. of filling on the wrapper toward the bottom point.

Starting at the bottom point, start to roll up the egg roll toward the top of the cutting board.

As you roll, fold in one side.

Then fold in the other side.

When almost finished rolling, dip your finger into a dish of water and run your finger along the top of the wrapper. Finish rolling up the egg roll. Place a dot of water on the outside of the wrapper so that the point will stay sealed.

Place the egg roll on the air fryer basket (or baking sheet (paid link)) and spray lightly with olive oil. Turn egg roll over and spray the other side. Roll and spray the rest of the egg rolls.

Bake in preheated air fryer or oven for about 6-8 minutes, then turn and bake another 6-8 minutes or until brown. (Remember all ovens and air fryers are different so you may need to play with the times a bit.) Or use a deep fryer and fry for a few minutes until golden brown. Drain on a plate lined with a paper towel.

Ingredients

  • 2 cups grilled/cooked chicken You can use my healthy grilled chicken in this or my Instant Pot chicken
  • 2 tablespoons Chain Reaction Spice
  • 2 teaspoons kosher salt
  • 1/4 cup bacon crumbles I use the ones from Costco.
  • 2 cans black beans
  • 1 can green chilies
  • 1 bunch green onions
  • 2 garlic cloves, minced
  • 1/4 cup cilantro, finely chopped
  • 1 lime, freshly squeezed
  • 1 cup Pepper Jack cheese, shredded
  • 20 egg roll wrappers – these are the 7 inch squares or you can use won ton wrappers
  • olive oil spray

Optional

  • Salsa for dipping
  • Light sour cream with Casa M Spice Chain Reaction for dipping

Instructions

  • Preheat air fryer to 425° or oven to 350°. I have a Breville Smart Oven Air so keep in mind the temperature and time may be different for different air fryers.

  • Prepare the air fryer basket by spraying with oil from your olive oil sprayer or line 2 baking sheets with parchment paper.

  • In a large bowl, mix together chicken, Chain Reaction Spice, kosher salt, black beans, green chilies, green onions, garlic, cilantro, lime, and cheese.

Notes

To freeze: place egg rolls on a baking sheet lined with parchment paper. Freeze uncovered until frozen, then transfer into vacuum sealed bags. When ready to cook, thaw covered with plastic wrap (so they don’t dry out) then air fry, deep fry or bake.

These Crispy Air Fried Chicken Egg Rolls are so delicious! You can bake them in the oven but I prefer to do them in the air fryer. They are also a great appetizer for a party as you can have ready to go, then pop them in the air fryer/oven when you want them.
