During the summer, I love all the fresh produce that is available and this salsa is so fresh and good that I could literally eat it by the spoonful.

Ingredients you need to make this Fresh Lime Salsa:

  • 6Roma tomatoesdiced
  • 2avocadosdiced
  • 1medium red onionfinely diced
  • 15.25ounceswhite corn1 can, drained
  • ¼cupfresh cilantrofinely chopped
  • ¼cupfresh lime juiceabout 2 limes
  • 2Tablespoonswhite vinegar

It’s so EASY to make this Fresh Lime Salsa:

Combine all ingredients in a large bowl and serve with chips. Also delicious with grilled chicken!

Ingredients

  • 6 Roma tomatoes diced
  • 2 avocados diced
  • 1 medium red onion finely diced
  • 15.25 ounces white corn 1 can, drained
  • ¼ cup fresh cilantro finely chopped
  • ¼ cup fresh lime juice about 2 limes
  • 2 Tablespoons white vinegar

Instructions

  • Combine all ingredients in a large bowl and serve with chips. Also delicious with grilled chicken!

*If desired, you can also add 1 can of black beans (rinsed and drained). It is delicious!

*I highly recommend making this a couple of hours before serving so that all the flavors can meld together.

    We do the same thing. Take one serving for us & then get rid of the rest. My husband usually takes the rest to work & his co-workers eat the goodies. They love it! Sometimes if I haven't made anything in a while, they start asking when the next treat is coming. Haha! This salsa sounds great by the way. I need to do better at eating healthier too. :)

    I make a similar recipe and LOVE it! I use balsamic vinegar and two cans of black beans. We mix in quinoa and served over spinach and lettuce is a filling and fresh main course!Love the new blog look and love you!
