While compiling the 2018 Canadian Food Trends, Loblaw found that Canadians are continuing to think about how their food choices impact the environment and are looking for options to reduce food waste. One way to reduce food waste is to find simple and delicious ideas on how to repurpose leftovers to create vibrant meals throughout the week. One of the items that I see my coworkers (and myself) grab when on the go is rotisserie chicken since it’s fast, easy, and healthy. However, a whole chicken can be a lot for a single person, so you’d end up with a ton of leftover rotisserie chicken.

So today, I wanted to share with you three recipes that not only use up your leftover rotisserie chicken but have an overlap in ingredients so you don’t end up with leftover ingredients as well. While this can be accomplished by making the same dish for the week (aka how I usually meal prep), today’s recipes will be different to show you that you can easily repurpose leftovers all week without it getting repetitive.

What You’ll Need for these 3 Leftover Rotisserie Chicken Recipes

Of course, you’ll need your leftover rotisserie chicken! It’s up to you if you want to include skin or not in these recipes since the chicken will be shredded. I personally eat all the crispy skin first so there’s never any of that left.

Spiralized Carrots, Broccoli, and Chicken with a Peanut Sauce

Loblaw had sent me this hand-held spiralizer and I thought it was perfect for freshening up the leftovers. The spiralized carrots are able to keep fresh in a sealed container for up to a week and each of the three recipes will incorporate it. On top of repurposing the carrots in the next two recipes, you’ll also be repurposing the peanut sauce if you choose to skip a salad dressing for the next recipe.

In addition to the spiralized carrots, you’ll also need:

  • leftover rotisserie chicken
  • peanut butter
  • soy sauce
  • ginger
  • black garlic (just to add a little oomph to the flavour. If you do not have access to black garlic, you can use regular garlic)
  • broccoli
  • a bit more than half a cup of water

This leftover revival is very simple. In a sauce pan, mix together 3 tbsp of peanut butter, 2 tbsp soy sauce, a bit more than half a cup of water, 1/8 tsp ginger, and a bit of garlic. Mix it until it’s well combined. It’s up to you if you want your broccoli and carrots to be raw or not but I left my carrots as is, and in a pan I used half of the sauce to “stir fry” my broccoli and shredded chicken. I let it cook for a little to soften my broccoli a little before serving it on top of a bed of spiralized carrots. Easy! I added some crushed peanuts on top for a little bit of garnish.

For this easy chicken salad recipe, you’ll need

  • leftover rotisserie chicken
  • cooked lentils
  • mixed greens
  • spiralized carrots
  • grapes
  • mixed nuts

In a bowl, combine your leftover rotisserie chicken, spiralized carrots, mixed greens, cooked lentils, grapes, and some mixed nuts! You can eat it as is or drizzle some of the peanut sauce/salad dressing of your choice on top. This salad is the prefect way to revitalize leftovers as it utilizes pretty much whatever in your fridge or the items that tend to be in a pantry (i.e. mixed nuts). The carrots and peanut sauce from the previous recipe can also be repurposed here so it’s one less step to have to do.

Leftover chicken wraps

These chicken wraps using leftover rotisserie chicken are the easiest out of the three because they utilize all the leftovers from the previous recipes!

For the first chicken wrap, you’ll need

  • leftover rotisserie chicken
  • spiralized carrots
  • half an avocado
  • the peanut sauce from the first recipe

For the second chicken wrap, you’ll need

  • leftover rotisserie chicken
  • mixed greens from the salad
  • spiralized carrots
  • half an avocado
  • the peanut sauce from the first recipe

They also fit perfectly into your purse. Trust me, I tried it! I saran wrapped each of them and they fit into my Kate Spade bag perfectly for an on-the-go meal to work!

Chicken stock

And the last way to help reduce food waste with these recipes is to use the chicken carcass to make chicken stock! In a large pot, place your carcass in, enough water to cover it, leftover carrots if you have any left, garlic, and onions and just let it simmer for a couple hours. I personally vacuum sealed the carcass to put in the freezer for when I have a second rotisserie chicken so I can have more bones for my chicken stock. Have an Instant Pot?   • cooking your rice or quinoa instead of water
  • make make sauce
  • make soup
  • risotto
  • and more!

Ingredients

Peanut Sauce

  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1/2 cup water, more if needed
  • 1/8 tsp ginger
  • 1 garlic

Spiralized Carrots, Broccoli, and Chicken with Peanut Sauce

  • 1 cup shredded chicken
  • 4-6 tbsp peanut sauce
  • 1 crown broccoli
  • 2-3 spiralized carrot
  • optional crushed peanuts for garnish

Healthy Chicken Salad

  • 1 cup shredded chicken
  • 2 cups mixed greens
  • 2 spiralized carrot
  • 1 handful mixed nuts
  • 1 hanfdul cooked lentils, 1:3 lentils to water ratio, simmer 10-15 minutes
  • 2 cups grapes

Easy Leftover Chicken Wraps

  • 2 wraps
  • 1 avocado , sliced
  • 2 cup shredded chicken
  • 1 spiralized carrot
  • 1 cup mixed greens

Instructions

Peanut Sauce

  • In a sauce pan, mix together 3 tbsp of peanut butter, 2 tbsp soy sauce, a bit more than half a cup of water, 1/8 tsp ginger, and a bit of garlic. Mix it until it’s well combined. Note: the more water you add, the less thick the sauce is. Adjust to your preference

Spiralized Carrots, Broccoli, and Chicken with Peanut Sauce

  • In a pan, "stir fry" your broccoli and shredded chicken with as much or as little peanut sauce you'd like until the broccoli has softened. Serve on top of a bed of spiralized carrots

  • Optional: Add some crushed peanuts on top for a little bit of garnish.

Healthy Chicken Salad

  • In a bowl, combine your leftover rotisserie chicken, spiralized carrots, mixed greens, cooked lentils, grapes, and some mixed nuts! You can eat it as is or drizzle some of the peanut sauce/salad dressing of your choice on top.

Easy Leftover Chicken Wrap

  • In your first wrap, put together yourleftover rotisserie chicken,spiralized carrots,half an avocado, and drizzle on some peanut sauce.

  • For your second wrap, put together your leftover rotisserie chicken, mixed greens, spiralized carrots, and the second half of your avocado before drizzling some peanut sauce on top.
