Hindu doesn't eat garlic and onion. Also in the Bhagavad-gita Lord Krishna advises against pungent foods such as onions and garlic.
The restriction on consuming garlic and onion is not a universal rule followed by all Hindus. It is primarily observed by certain sects or groups within the Hindu community, particularly those who follow a more traditional or strict dietary code, such as Brahmins and some.
The reasons for avoiding garlic and onion vary among different interpretations and traditions. Here are a few possible explanations, I asked with few gurus, temple and following reason they gave.

Spiritual and Energetic Reasons,
Some believe that garlic and onion possess strong and pungent qualities that can stimulate passion, increase anger, and excite the senses. These ingredients are considered to be "rajasic" or "tamasic" in nature, associated with heightened activity and a negative influence on spiritual practices, meditation, or mindfulness. Thus, to maintain a pure and calm state of mind, some individuals choose to avoid them.
Ayurvedic Perspective
In Ayurveda, an ancient system of traditional Indian medicine, garlic and onion are believed to have heating properties and can potentially disturb the balance of the bodily humors (doshas). They are considered to be "rajasic" foods that may lead to restlessness and increase the production of excessive mucus in the body. Consequently, adherents of Ayurveda may avoid them for health reasons.
Symbolism and Rituals:
For certain rituals and ceremonies, purity is highly emphasized in Hindu traditions. Garlic and onion are believed to produce strong odors, which might be considered unclean or impure in specific contexts. Avoiding them during sacred occasions or religious rituals is a way to maintain ritual purity.
It's important to note that these reasons are not universally accepted or followed by all Hindus. Dietary practices can vary greatly within the Hindu community, and individuals may choose to include or exclude garlic and onion based on personal beliefs, regional customs, family traditions, or health considerations.
From my chef prospective if you use curry leave or Asafoetida, we call Hing in Nepal instead of garlic and onion , it help a lot. I did R& D and now expert of Jain meal and I do use above and fenugreek seed and leaves and mustard seed help a lot to naturally enhance favour.
