My boys are growing up way too fast. It is true what they say. The days go slow but the years go fast. I'm not quite sure when it happens- when I blink or throwing a load of laundry in the wash. But I swear every time I look at my boys they have grown about half an inch in height and attitude overnight!

Every other Wednesday I volunteer in Big C's Kindergarten class. Yesterday was our Wednesday and I don't know who was more excited- me or him?! Pretty sure it is me --- it was a break from being a parent and I got to enjoy a moment being an adult with an another adult in the room. Let's not forget the bonus of seeing the joy in my son's face from his mom by his side. He was beaming and I was beaming seeing him in his element! It was a good day!

I love these small traditional moments together. The moments when we are together spending time doing something slightly different than the day to day expected. In his teenage years he won't want to hang with me. I am holding on to family traditions as long as I can keep the kids controlled engaged (wink, wink).

How To Make Popcorn On The Stove

I rarely ever buy store-bought popcorn anymore. This stovetop popcorn recipe takes as little as 5-10 minutes, is so much healthier and will save you money! Organic popcorn kernels only cost about $1.27 per pound and a little goes a long way!

  1. Heat a large pot on the stove on medium-high heat and add 2 Tablespoons of coconut oil and three kernels in a pot.
  2. Cover and cook on medium-high heat until the kernels pop. When you start to hear three pops, remove your pot from the heat and take out the 3 popped kernels.
  3. Add 1 cup of fresh kernels to the oil making sure they cover the bottom evenly and cover the pot with the lid. Then add your pot back to the heat and cook on high for about 2-3 minutes for the kernels to pop.
  4. As soon as the kernels start to slow down popping (about 2-3 minutes) turn the heat off and let them set to keep popping. Check it to make sure it does not start to burn.
  5. Garnish with melted butter or cooking spray and sprinkle salt or your favorite seasoning to taste.

Toppings for homemade popcorn

Top the popcorn with salt and add a few extras to your snack:

  • sesame seeds
  • poppy seeds
  • nutritional yeast
  • melted butter
  • dried onion
  • dried herbs such as parsley, basil, oregano (ranch style anyone?!!)
  • caramel drizzle and almonds
  • cinnamon and monk fruit sugar or coconut sugar

This easy popcorn recipe is healthy, crunchy, great for snacks or turned into these popcorn marshmallow treats🙂

Ingredients

  • 2 Tablespoons coconut oil
  • 1 cup popcorn kernels
  • pink salt
  • coconut oil cooking spray optional

Instructions

  • Heat a large pot on the stove on medium-high heat and add 2 Tablespoons of coconut oil and three kernels in a pot. Cover and cook on medium-high heat until the kernels pop. When they pop, remove your pot from the heat and take out the 3 popped kernels.

  • Add 1 cup of fresh kernels to the oil spreading evenly on the bottom of the pot and cover with the lid. Then add your pot back to the heat and cook on high for about 2-3 minutes for the kernels to pop. As soon as the kernels start to slow down popping (about 2-3 minutes) turn the heat off and let them set to keep popping. Check it to make sure it does not start to burn. The popcorn is finished when you no longer hear the kernels popping.

  • Garnish with butter or cooking spray and season with salt (to taste) and your favorite seasoning.

Notes

*You can also cut the recipe in half and make 1 tablespoon coconut oil with ½ cup of kernels for a smaller crowd.
